Chickpeas, also known as garbanzos, are believed to be over 7,500 years old with origins near Burdur in Turkey where the fertile crescent optimized growth. There has been evidence that chickpeas existed in pre-pottery Neolithic and in early Bronze age deposits near Jericho.

 

Today, chickpeas are still prevalent throughout the world because of their abundant nutritional properties and rich flavor. Chickpeas contain 20% protein, is high in carbohydrates, and is a rich source of lecithin and potassium. They are often found dried or split, and canned whole or pureed.

 

Radici of Tuscany Organics uses an indigenous chickpea variety, or cece as they are known in Italy, to create an appetizing meal in a jar. Organic baby chickpeas from the Chianti region, are cooked until tender and flavored with extra virgin olive oil and sage.
