L’Antica Madia is a pasta producer located in the Langhe area of Italy. The Langhe is a hilly area in lower Piedmont, whose capital, Alba, is world reknown for its wines, truffles, and many other gastronomic products.

L’Antica Madia has created an organic line of pasta called Pasta d’Alba. Hand made using ancient recipes and bronze dies, it consists only of organically farmed grains and spring water.

Farro Tagliatelle is made with farro, a type of wheat also known as emmer, which dates back to ancient times when it grew wild in what is now Syria. Cultivated, it became a major dietary staple in Egypt. Now, it is grown in many countries including the Tuscan area of Italy. Although it is a wheat product and does contain gluten, it is generally lighter and easier to digest than the typical durum wheat pastas.
